    Easy Chicken Marsala with Pasta

    If you're looking for an impressive, yet easy meal to make, this chicken marsala recipe is one to consider. For the most part, you are likely to have most of this on hand to begin with. Don't let the list of ingredients scare you, it's really not difficult to make. Here's what you'll need:

    Ingredients for 4 servings:

    • 4 boneless, skinless chicken breasts
    • 1/2 cup flour
    • 1/2 tsp each: salt, pepper, oregano, and onion powder
    • 1 tsp oregano
    • 4 Tbl olive oil
    • 4 Tbl butter or margarine
    • 16 oz fresh button mushrooms, sliced
    • 2 Tbl chopped fresh parsley
    • 1 cup marsala wine
    • 1 cup chicken bone broth
    • 2 1/2 tsp cornstarch
    • 1, 16 oz package fettuccine noodles


    Pound chicken breasts in between two layers of parchment paper or plastic wrap to equal thickness of about 1/4".

    Next, combine flour and seasonings in a large bowl, then dredge chicken on both sides, shaking off excess. Set aside

    In a large skillet over medium-high heat, add the olive oil and tilt to coat. When hot, add chicken pieces and cook for about 4 minutes on each side or until it begins to golden. Remove chicken from pan and set aside on a clean plate.

    Return skillet to medium heat and add butter and mushrooms. Stir to coat, then allow to cook until softened. Meanwhile, as mushrooms cook, bring another pot of water to a boil to prepare the noodles.

    When mushrooms are soft, slowly whisk in marsala wine, deglazing pan by scraping bits off the bottom and sides. Continue cooking and stirring for about 5 minutes.

    While this is cooking, combine the broth and cornstarch in a separate bowl and stir well to combine, then pour into pan with mushrooms. Whisk to combine.

    Increase heat to medium- high and bring to a simmer, whisking until sauce is thickened. Reduce heat to medium and add additional salt, pepper, or oregano for desired for flavor.

    Return chicken to the pan and allow to heat for another couple minutes, then place a chicken piece with mushroom sauce over prepared noodles and enjoy!
