    Grilled Shrimp Tacos with Avocado Salsa

    Taco Tuesday!!!! This time, we've got some amazing shrimp tacos with fresh avocado salsa. They are incredibly flavorful, easy to prepare, and provide a delicious twist on the usual. These tacos taste like they came from a fancy restaurant, but are surprisingly fast and easy to make! Here's what you'll need:

    Ingredients:

    For Shrimp:

    • 2 lb large or extra large shrimp, fresh or frozen (thawed), peeled, de-veined, and tails removed*.
    • 1 1/2 Tbl olive oil
    • 1/2 tsp chili powder
    • 1/2 tsp smoked paprika
    • 1/2 tsp salt
    • 1/4 tsp black pepper
    • Skewers (optional)

    Avocado Salsa:

    • 1 small shallot, diced
    • 1 jalapeno, seeded and diced
    • 2 garlic cloves, diced
    • 1 tomato, seeded and chopped
    • 1 avocado, chopped
    • 3/4 tsp salt
    • 1 Tbl fresh lime juice (half a lime)
    • 1/4 cup chopped fresh cilantro

    Other:

    • 8, 10" corn or flour tortillas
    • 2 cups cabbage mix or sliced lettuce
    • Lime wedges
    • Sour cream
    • Cotija cheese, crumbled


    First, make the salsa by combining the prepared, diced shallot, jalapeno, garlic cloves, tomato, avocado, salt, lime juice, and cilantro in a medium. Mix well to combine, then cover with plastic wrap directly on avocado mixture to prevent browning and store in refrigerator until ready to use.

    Next, prepare the shrimp by combining them with the olive oil, chili powder, smoked paprika, salt and pepper in a bowl, and mix well to coat. Cover and let sit to marinade while you heat the desired cooking appliance.

    If grilling*, ensure that the grates are well oiled and set to a medium flame. Grill shrimp individually or skewered for about 2 minutes per side or until pink. See below:

    Once shrimp is cooked, transfer to a bowl or platter and cover with foil to keep warm. Then, warm or grill tortillas and assemble by placing a spoonful of avocado salsa, then top with shrimp, cabbage, cheese, and serve with a lime wedge.

    *Notes:

    • You can also pan fry the shrimp or broil for the same amount of time.
    • A white fish, like cod, can be used to substitute for shrimp.
