    Homemade Pepperoni Pizza Rolls

    These are so delicous! They're great for Friday pizza night or for game day snacks. Make ahead for a quick after school snack and you've got a winner for sure! Here's all you need to make them:

    Ingredients for dough:

    • 1 1/2 cups warm water
    • 1 Tbl honey
    • 2 Tbl olive oil
    • 4 tsp instant yeast
    • 1 1/2 tsp salt
    • 2 cups AP flour
    • 2 cups bread flour

    Filling:

    • 2 1/2 - 3 cups pizza sauce*
    • 2 cups mozarella cheese
    • 1 cup pepperoni, chopped
    • 1/4 cup cornmeal
    • 1/4 cup parmesan cheese


    Preheat your oven to 425°F. Line a large rimmed baking sheet (approximately 12x18 inches) with parchment paper.

    To make the dough, combine the water, honey, olive oil, yeast, salt, and 1 cup of flour in the bowl of an electric stand mixer fitted with a dough hook (or mix by hand in a large bowl with a spoon). With the mixer on low speed, gradually add the remaining flour until the dough pulls away from the sides of the bowl and forms a soft, smooth ball. Knead the dough for 3-4 minutes (add a few extra minutes if using whole wheat flour). Allow the dough to rest, covered, in the bowl for 10-15 minutes.

    Divide the dough into two equal portions. On a lightly greased countertop, press one portion into a thin rectangle, about 14x10 inches.

    Spread 1/2 to 3/4 cup of pizza sauce evenly over the dough. Sprinkle half of the mozzarella cheese and half of the pepperoni evenly on top. Starting from one long side, roll the dough up like a cinnamon roll, pinching the seam to seal it.

    Place some cornmeal in a bowl or shallow dish. Cut the rolled dough into 1-inch sections. Press the bottom of each pizza roll into the cornmeal, then place them on the prepared baking sheet, spacing them about an inch apart.

    Repeat the process with the remaining dough.

    Once all the pizza rolls are arranged on the baking sheet, sprinkle them evenly with Parmesan cheese. Bake for 15-20 minutes, or until golden brown.

    Warm the extra pizza sauce, and serve the pizza rolls hot from the oven with the sauce for dipping.
