Sweet chili sauce is such an amazing condiment for egg rolls, over rice, noodles, chicken, and even on specialty Thai Chili Pizzas (Like my recipe HERE). This is surprisingly easy to make and can be adjusted to be as spicy or as mild as you'd like it. Here's what you'll need to make 2 cups of sauce:

    Ingredients:

In a small saucepan, combine all ingredients except for the cornstarch and 1 Tbl water, and bring to a boil, stirring frequently.

Once the sugar has dissolved, add the cornstarch mixture, stirring constantly until the sauce thickens, about 1 minute. Allow the sauce to cool completely, then transfer to an airtight jar or container and refrigerate. It will keep for up to a week and yields about 1 cup.

Your sauce can be stored in the fridge for about a week, and can be frozen for up to 3 months. If you choose to freeze it, warming it up and whisking will return it to it's original consistency. You will not need to bring it to a boil again, just warm enough to mix it together again. If needed, add a few tablespoons of water to thin it out if it becomes too thick.
