    Mango Sticky Rice- A Delicious Fresh Summer Dessert

    Manoges and coconut go so well together! This is such a simple dessert to make, the most time consuming part is just waiting for the rice to soak. It's great for a summer treat or anytime of the year! Here's what you'll need to make 3 servings:

    Ingredients:

    • 1 cup dry, sweet rice or glutinous rice
    • 1 cup coconut milk, full fat
    • 3 Tbl sugar
    • 1/2 tsp sea salt

    For Coconut Sauce:

    • 1/2 cup coconut milk, full fat
    • 3 Tbl sugar
    • 1 tsp cornstarch
    • 2 tsp water

    Other:

    • 2 large mangoes
    • Toasted coconut, optional
    • Sesame seeds, optional


    Rinse the rice until the water runs fairly clear (3-4 times), then cover with fresh water and soak it for a minimum of 8 hours up to 24, ensuring the rice is fully submerged.

    Drain water and place rice in a rice cooker or steamer and steam for about 20 minutes. Rice should be cooked, but still chewy at this stage.

    In a large pan, heat the coconut milk over medium-high. Stir in the sugar and salt, and let the coconut milk come to a simmer. When it starts to boil, lower the heat to medium and keep stirring until the sugar is fully dissolved.

    Carefully add in the steamed rice and cook until it absorbs the coconut milk and thickens, about 4 minutes. Turn off the heat and let it cool for 5 minutes.

    For the sauce, combine the coconut milk and sugar in a saucepan and bring it to a boil over medium-high heat, stirring often. Once it begins to boil, turn heat down to medium and prepare the cornstarch slurry mix with the cornstarch and water.

    Slowly pour into the coconut sauce while stirring then turn heat off so it can thicken while preventing it from being overcooked. Stir for another minute or two, then transfer into a sauce bowl or pourer.

    Scoop a portion of rice onto a plate or dessert bowl. Top with mango slices or chunks, then drizzle coconut sauce over top. Top with shredded coconut or sesame seeds if desired.
