    Fresh and Easy Chicken Fajitas

    Tasty budget meals are things I love! Being able to serve the whole family a tasty meal without breaking the bank is a win! These fresh and easy chicken fajitas are budget friendly, super tasty, customizable, and can be dished up in 30 minutes or less. This is what you'll need to make 4 servings:


    Ingredients:

    • 4 boneless chicken breasts, cut into strips
    • 1 medium-large sweet onion (white or yellow)
    • 3 medium bell peppers, sliced into strips (I like to use 1 of each color for different flavors)
    • 3 TBl olive oil
    • 1 tsp liquid smoke (opt for a lighter one like hickory or applewood)
    • 2 tsp chili powder
    • 1 tsp smoked paprika
    • 1/2 tsp garlic powder
    • 1/2-1 tsp black pepper
    • 1-2 Tbl cumin
    • salt to taste

    Other:

    • Tortillas
    • Sour cream
    • Lime wedges
    • Guacamole or avocado slices
    • Fresh chopped cilantro or parsley


    First, combine 1 tablepoon of the olive oil, chili powder, smoked paprika, garlic powder, black pepper and cumin in a small bowl and stir to combine. Next, add chicken strips to a bowl and pour spice mixture over. Toss to coat evenly and set aside.

    Next, slice onions into 1/4 " rounds, then lay flat and cut each round in half.

    Heat up 1 tablespoon of olive oil in a large frying pan over medium high heat. Add chicken with any reserved marinade and cook until no longer pink. (If your pan isn't large enough, you may need to cook your chicken in two batches. Just make sure to set the first cooked batch aside in a clean dish so you don't cross contaminate).

    Once chicken has been cooked and set aside, add the last tablespoon of oil to the frying pan and add in the sliced onions. Fry for about 2 minutes, then add in the sliced peppers and give it a quick stir. Cook for another 2-3 minutes. Add any additional salt and / or pepper at this stage, then add the chicken back in and heat through.

    Turn off heat and serve on a tortilla with your toppings of choice. (We like sour cream, avocado slices and a lime wedge).
