    Bang Bang Chicken Appetizer or Meal

    Don't let the ingredient list scare you, this is actually pretty easy to make. If you cut up the chicken and toppings head of time, it's even faster. What I love about this recipe is that you can make it kid friendly, or make it extra spicy, and it still turns out amazing. Here's what you'll need for about 2 servings:

    • Ingredients:
    • 1 pound boneless, skinless chicken breasts, cut into 1" pieces
    • 2/3 cup buttermilk
    • ¾ cup all-purpose flour
    • ½ cup cornstarch
    • 1 large egg
    • 1 tablespoon hot sauce
    • 1/2 tsp ground black pepper
    • 1/2 Tbl sriracha or hot sauce
    • 1 tsp garlic salt
    • 1 tsp paprika
    • 1/4 tsp white pepper
    • 1 cup Panko (Japanese breadcumbs)
    • 3 cups vegetable oil
    • 2 green onions, sliced
    • 2 tablespoons chopped fresh parsley leaves

    Sweet Chili Sauce:

    • 1/2 cup mayonnaise
    • 1/4 cup sweet chili sauce
    • 1 Tbl honey
    • 1-2 tsp sriracha or hot sauce, to taste


    First make the sauce by combining the mayo, sweet chili sauce, honey, and sriracha or hot sauce in a small bowl. Whisk to combine well, then cover and set in the fridge for later.

    Begin heating vegitable oil in a large pot or dutch oven on medium-high heat. Hold temperature at 360 degrees.

    While oil is heating, prepare the chicken by whisking together the buttermilk, flour, cornstarch, egg, sriracha or hot sauce, garlig salt, paprika, and black and white pepper in a large bowl.

    In another bowl, pour in the panko. Then, dip each chicken piece into the buttermilk mixture, then dredge into the panko and roll and press to coat evenly.

    Working in batches, add chicken pieces to the hot oil and cook, flipping on each side as necessary, until evenly golden and crispy (about 3 minutes).

    Once golden brown and cooked through, scoop out with tongs and set on a plate lined with paper towels to drain excess.

    Serve while hot. Add drizzled sweet chili sauce made earlier over top and eat as appetizers, or serve over a bed of rice with extra sauce. Garnish with sliced green onions, and chopped parsley leaves. Enjoy!!
