    Citrus Chili Pork Loin Roast

    Citrus in meats is such an awesome thing! This combo of bright citrus with a little heat is incredible and it's very easy to make too! Here's all you'll need to make 4 servings:

    Ingredients:

    • 1 medium pork tenderloin
    • 3/4 tablespoon sea salt
    • 1 small roasted poblano chili, diced *
    • 1 tablespoons dark brown sugar
    • 1/2 tablespoon Mexican oregano
    • 1 teaspoon ground cumin
    • 1/2 teaspoon minced garlic
    • 1/4 teaspoon black pepper
    • 2 tablespoons freshly squeezed grapefruit or orange juice
    • 1/2 tablespoon avocado or olive oil


    First, in a small bowl, mix together the minced chilis, brown sugar, oregano, cumin, garlic, and black pepper. Gradually stir in 1 tablespoon of grapefruit or orange juice until the mixture forms a thick paste. If needed, add more juice to reach the desired consistency.

    Rub seasoning paste well over all sides of pork tenderloin and place in a zip top bag, remove air and seal. Let marinade overnight.

    Preheat your oven to 450°F. Line a baking sheet with parchment paper or foil. Place marinated pork loin on prepared pan, ensuring that any extra marinade is on top of pork loin. If necessary, use a basting brush to ensure an even coat. Drizzle avocado or olive oil over top.

    Roast the pork in the oven for 25-35 minutes, adjusting based on the size of your tenderloin, or until the internal temperature reaches 140-145°F at the center. Once done, take the pork out of the oven and cover it loosely with foil. Let it rest for 10 minutes before slicing into thin rounds. Garnish with chopped parsly if desired. Serve while hot and enjoy!


    *Notes:

    To roast poblano: Place poblano on top wrack of oven and broil, turning with tongs as it blisters and begins to brown/char. Once evenly blistered, remove from oven, cover for 5-10 minutes, then peel outer skin off, the continue to dice.

    Alternatively, you can use a small jar of diced chilies or to kick up the spice a little more, swap out for a bit of cayenne or ancho powder.
