    Amish Shoofly Pie

    Years ago, I visted Amish country on a family trip back east. It was such a great experience to see such vastly different places from what I was accustomed to. I loved all the street markets where we could sample and buy all sorts of incredible foods. This was one that stuck with me. Here's what you'll need to make your own 9" deep dish shoofly pie:

    Ingredients:

    • 3/4 cup molasses*
    • 3/4 cup hot water
    • 3/4 teaspoon baking soda
    • 1 1/2 cup all-purpose flour
    • 1 tsp cinnamon
    • 1/2 tsp nutmeg
    • 1 1/2 cup dark brown sugar
    • 1/8 tsp salt
    • 1/4 cup cold unsalted butter
    • 1, 9" deep dish pie crust

    First, preheat oven to 400 degrees.

    Next, in a bowl, mix together the flour, sugar, cinnamon, salt, and nutmeg and stir to combine. Using a forks or pastry blender, cut in the butter until the mixture forms a crumbly, pebble-like texture.

    In a mixing bowl, combine the molasses, water, and baking soda, mixing until well combined. Pour the mixture into a prepared pie shell. Evenly sprinkle the crumb topping over the filling.

    Bake at 400°F for 15 minutes, then reduce the oven temperature to 350°F and continue baking for an additional 20 minutes. The shoo-fly pie is ready when it is set and firm.

    Remove from heat and allow to cool fully. Top with whipped cream and enjoy!


    * Notes: Dark or blackstrap molasses is most commonly used. However, you are welcome to experiment with a half-and-half of light and dark if you are going for a lighter / less robust molasses flavor.
