    Spicy Buffalo Meatball Appetizers

    Here it is! Spicy buffalo meatballs!! These are so dang tasty and come with a nice kick. Feel free to leave the honey out and/or kick it up a bit more with a dash of Tobasco and/or cayenne. This recipe is great that you can taylor it up or down to your preferences. Here's what you'll need to make 8 appetizer servings:

    SAUCE:

    • 1/4 cup butter
    • 1/2 cup Frank's hot sauce
    • 3 tablespoons honey, optional
    • Cayenne, optional for additional heat
    • 1-2 dashes of Tobasco, optional for extra heat

    MEATBALLS:

    • 2 tablespoons vegetable oil
    • 1/2 cup minced sweet onion
    • 1 1/2 pounds ground meat (your choice or use a mix of meats)
    • 2/3 cup breadcrumbs (plain or Italian style)
    • 1/4 cup finely grated parmesan
    • 2 cloves garlic, minced
    • 1/4 cup minced parsley
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 egg, lightly beaten


    Sauté the onion in vegetable oil over medium heat until softened, then add the minced garlic and cook for another minute or so, ensuring you do not burn it, then remove from heat and set aside to let cool.

    Next, in a large bowl, combine all the meatball ingredients (along with sauteed onions and garlic) and mix thoroughly. For best results, let the mixture rest in the fridge for 30 minutes to allow the breadcrumbs to absorb moisture. When ready, preheat your oven to 425°F.

    Then, form the mixture into meatballs of equal size and place them on a greased baking sheet, ensuring they do not touch.

    Bake the meatballs for 25 minutes.

    Meanwhile, in the same pan as you sauteed the onion, heat the hot sauce over medium-low heat. If you’re using honey, which I personally recommend because I'm a spicy food baby, stir it in at this point. If you're wanting it hotter, add in the dash or two of Tobasco and/or cayenne to your liking, then gradually whisk in the butter, one tablespoon at a time, until fully incorporated. Keep the sauce warm but avoid letting it simmer to prevent it from separating.

    Once done, transfer them to a large bowl and pour the Buffalo sauce over them. Toss until evenly coated and serve with celery sticks and blue cheese dressing.
