    Grilled Peruvian Chicken

    Don't let the list of ingredients fool you, it's super simple to make. Adjust the heat and spices to your liking. Here's what you'll need for 4 servings:

    Ingredients:

    • 4 pounds boneless and skinless chicken thighs
    • 3 cloves garlic, peeled and minced
    • 1/3 cup soy sauce
    • 2 Tablespoons lime juice
    • 2 Tablespoon extra virgin olive oil
    • 2 Tbs cumin
    • 2 Tbs smoked paprika
    • 1/2 teaspoon dried Mexican oregano
    • Black pepper

    Green Sauce:

    • 3 jalapeños, seeded and chopped
    • 1 cup fresh cilantro leaves
    • 1 shallot
    • 2 cloves garlic, peeled
    • 1/2 cup mayonnaise
    • 1/4 cup sour cream or plain greek yogurt
    • 3 tsp lime juice (fresh squeezed, if possible)
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 2 Tablespoons extra virgin olive oil


    First, make the chicken marinade by pureeing the garlic, soy sauce, lime juice, oil, cumin, paprika, oregano, and a pinch of black pepper in a blender or food processor until smooth. Place the chicken in a large ziplock bag and pour the marinade over it. Seal the bag and refrigerate for 8 to 24 hours.

    For the Green Sauce:
    Blend all ingredients except the olive oil until smooth. With the blender running, slowly drizzle in the olive oil until fully combined. Transfer to a bowl and refrigerate until ready to serve.

    Grill the Chicken:
    Preheat the grill to medium-high heat (about 350°F). Remove the chicken from the marinade, shaking off any excess. Place the chicken on the grill grates and cook for 5-6 minutes with the grill cover closed. Flip the chicken thighs using tongs and continue cooking for another 5-6 minutes. Ensure the internal temperature reaches 165°F with a digital thermometer.

    Oven Method:
    Preheat the oven to 500°F. Arrange the chicken pieces in a 13×9-inch roasting pan and add 1 cup of water. Bake uncovered for 30 minutes, then cover the pan with foil and bake for an additional 15 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F).

    Air Fryer Method:
    Preheat the air fryer to 360°F. Place the chicken in the air fryer basket and cook for 12-15 minutes, flipping halfway through, until the internal temperature reaches 165°F.
