    Deep Fried S'mores : Classic Treat

    I don't care if Labor Day is the mark of the end of summer, these little babies can be made any time of the year (indoors or outdoors). Here's what you'll need for about 36 small squares:

    Ingredients:

    • 1 bag large regtangular marshmallows
    • 9 graham cracker sheets
    • 3 large chocolate bars (about 4.25 oz each)

    Pancake Batter:

    • 1 1/2 cups pancake mix
    • 1 large egg, beaten
    • 1 cup milk
    • 2 tsp veg. oil

    Gluten-free batter:

    • 1 cup rice flour
    • 4 Tbsp cornstarch
    • 1 Tbsp baking powder
    • 1 tsp salt, optional
    • 3/4 cup ice-cold water add more as needed

    Optional Toppings:

    • powdered sugar
    • chocolate sauce
    • Whipped Cream

    Heat the oil in large deep fryer or large pot to 375 degrees. In a medium bowl, combine the pancake

    Break up one bar of chocolate and place in a double boiler on medium low heat. Stir occasionally until completey melted.

    Next, line a 8 x 8-inch pan with plastic wrap. Arrange a layer of graham crackers at the bottom. Spread half the melted chocolate over the crackers, followed by a layer of chocolate bars or chocolate bar pieces. Drizzle half of remaining layer of melted chocolate, then place marshmallows on top. Brush tops of marshmallows with remaining melted chocolate, then top with another layer of graham crackers. Refrigerate to set. The melted chocolate acts as a "glue" to help hold it all together.

    Make the Batter:

    If using the pancake batter, mix all in a bowl, but take care not to overmix. Let batter sit for up to 5 minutes.

    For the gluten-free batter, mix all the dry ingredients first. Then, slowly add the water in until you've reached the desired consistency.

    Cut and Prepare S’mores:

    Once the s’more mixture has set, cut it into 36 squares using a sharp paring knife. Keep them refrigerated until ready to fry.

    Frying:

    Heat oil to 375°F in a saucepan. Dip each s’more square into the batter, ensuring it is well-coated. Fry in batches until golden brown, about 2 minutes. Remove and drain on paper towels. Top with powdered sugar, chocolate sauce, and/or whipped cream and enjoy!
