    BLT Chicken Salad Stuffed Avocados

    Here's what you'll need to make 6 halves:

    Ingredients:

    • 12 slices of bacon
    • 2 cups shredded rotisserie chicken
    • 1 rib celery, diced
    • 2 roma tomatoes (or use cherry/grape snacking tomatoes cut in half)
    • 1 cup finely chopped romaine lettuce
    • 2 green onions, thinly sliced
    • 3 avocados, halved and pits removed
    • 1/2 cup mayonnaise
    • 1 teaspoon Dijon or yellow mustard
    • 1/2 teaspoon seasoned salt
    • 1/2 tsp celery seed
    • 1 pinch black pepper (or to taste)
    • 1/4 tsp dried dill, optional

    Cook the bacon to your preferred level of crispiness, either by baking or frying, then place it on paper towels to drain. Meanwhile, cut the tomatoes into quarters and use your fingers to remove the pulp and seeds, then dice them into small pieces. Next, chop the romaine lettuce and cooled bacon into small bits.

    In a large bowl, mix together the mayonnaise, mustard, seasoned salt, celery seed, black pepper, and dill (if using). Add the chicken, bacon, and celery to the bowl and stir to combine. Then, fold in the chopped romaine and sliced green onions.

    To serve, spoon the chicken salad into each avocado half. Since the cavity left by the pit isn't large, you may need to pile some of the salad on top of the avocado. Alternatively, you can dice the avocados and serve the chicken salad over a bed of lettuce as a complete salad or in lettuce wraps. Enjoy!
