    Easy Pineapple Coconut Cake with Pineapple Glaze

    I absolutely love how this cake came out. It's so full of flavor, yet so easy to put together! This is what you'll need for one 9" cake pan:

    Ingredients:

    • 1, 15 oz can of pineapple chunks in own juice
    • 1/2 cup butter
    • 1 cup sugar
    • 2 large eggs, separated
    • 1/2 cup sweetened shredded coconut
    • 2 cups all-purpose or cake flour
    • 2 teaspoons baking powder
    • 1/2 cup powdered sugar

    Instructions

    Drain 3/4 of the pineapple juice from the can, setting the juice aside. Place the pineapple with the remaining juice in a blender or food processor and pulse until it’s crushed. Set aside one cup of the crushed pineapple, and add the rest to the reserved juice.

    Next, grease a 9-inch round springform pan, lined at the bottom with lightly oiled parchment paper. Preheat your oven to 375°F.

    In a mixing bowl, beat together the sugar and butter until light and fluffy. Add in the egg yolks, beating until fully combined, then mix in the reserved cup of crushed pineapple. Stir in the shredded coconut, then sift in the flour and baking powder, mixing until well incorporated.

    In a separate bowl, beat the egg whites until soft peaks form. Gently fold the egg whites into the cake batter in three batches, being careful not to overmix.

    Pour the batter into your prepared pan and bake for 35 minutes, or until the cake is golden brown and firm to the touch. A wooden skewer inserted into the center should come out clean.

    While the cake bakes, make the glaze by combining the reserved pineapple juice, remaining crushed pineapple, and powdered sugar in a small saucepan. Whisk until smooth, then heat over medium-high, stirring constantly until it just begins to simmer. Remove from heat and let cool for 5-10 minutes, stirring occasionally.

    When the cake is done, pour the warm glaze over the hot cake while it’s still in the pan. Let the cake cool completely before removing it from the pan. Then, remove and slice. Dust with powdered sugar or whipped cream if desired, and enjoy!
