    Fresh and Creamy Cucumber-Tomato Salad

    I love this salad. It's so fresh and creamy, with the perfect garlic and dill cream sauce! This is a very forgiving salad, so feel free to adjust things in or out to your liking. Here is what you will need for about 5 servings:

    Ingredients:

    • 1 medium to large cucumber
    • 2 large Roma tomatoes, seeded and diced or grape tomatoes, halved
    • 1/2 white or red onion, diced
    • 1/2 cup red radishes, sliced or diced, optional
    • 1/2 teaspoon minced garlic, optional
    • 1 cup mozzarella pearls
    • 1/2 teaspoon minced garlic optional
    • 1/4 cup chopped parsley
    • 1/2 cup sour cream
    • 2 Tablespoons freshly squeezed lemon juice
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/2 Tablespoon celery seed
    • 1/2-1 teaspoon dried dill or 1-2 teaspoon fresh dill


    Chop the cucumber and tomatoes into bite-sized pieces and add them to a large salad bowl. Then, mix in the chopped onion, radishes (if using), garlic (if using), mozzarella pearls, and parsley.

    In a measuring cup, whisk together the sour cream, lemon juice, salt, pepper, celery seed, and dill until smooth. Taste and adjust any seasonings to your preference, then pour the dressing over the vegetables and gently toss everything to coat.

    Serve the salad immediately or cover the bowl with plastic wrap and refrigerate until you're ready to serve. Enjoy!


    *Notes:

    You can use any type of cucumbers you have available. If the skin is thick or waxy, you might want to peel it off for a better texture. For the tomatoes, I prefer using Roma tomatoes since they're firmer and less likely to get mushy in the salad, but grape tomatoes work well too.
