    Easy: Fluffy Honey Almond Banana Muffins

    These muffis are so tasty! There is so much going on flavor-wise, and yet, they are incredibly easy to make! (We tend to fight over the last few). This is what you'll need for 12 muffins:

    Ingredients:

    • 2 cups almond flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 3 large bananas
    • 1 large egg
    • 1/4 cup honey or maple syrup
    • 1 teaspoon vanilla extract
    • 1/2 cup chocolate chips, plus more for topping, optional
    • 1/4-1/3 cup slivered or chopped almonds, or pecans, optional


    Preheat your oven to 350°F and line a 12-cup muffin tin with liners. Lightly spray the liners with cooking spray and set aside.

    In a large bowl, whisk together your dry ingredients. In a high-speed blender, blend the bananas, egg, honey or maple syrup, and vanilla extract until smooth.

    Combine the wet and dry ingredients, stirring gently to mix. If desired, fold in chocolate chips.

    Evenly divide the batter into the muffin liners and, if you'd like, sprinkle chopped almonds, pecans, or extra chocolate chips on top. Bake for 18-20 minutes, until the muffins are golden and a skewer inserted comes out clean.

    Cool the muffins in the pan for 10 minutes, then transfer them to a wire rack to cool completely. Enjoy!

    *Notes:

    This recipe is fairly forgiving. Feel free to add some cinnamon and/or a dash nutmeg if you'd like for a little more warmth.

    You can leave the chocolate chips or nuts out completely or even add more nuts to the batter itself.

    Although I have not tried this myself, someone mentioned that they successfully made these into pancakes. If you try that, let me know how it turns out!
