    Grilled Hot Honey Chipotle Chicken Skewers

    Although this is written to be on the spicy side, you can easily adjust to make it flavorful, but mild. You can also grill, air fry, or oven bake these. Just make sure that if you are using bamboo skewers, they are soaked well so that they don't burn. This is what you'll need for about 8 skewers:

    Hot Honey Chipotle Mix:

    • 2 lb chicken breast, cut into bite-sized pieces
    • 2-3 tablespoon hot honey or regular honey
    • 2 chipotle pepper in adobo, minced
    • 2 clove garlic, grated
    • 4 Tbl taco seasoning
    • 2 Tbl orange juice, zest and juice
    • 1 teaspoon orange zest, optional
    • 1 teaspoon kosher salt
    • 2 tablespoon olive or avocado oil
    • Melted honey butter, optional, for finishing

    If you're using wooden skewers, soak them in water for 15-30 minutes while prepping the chicken.

    Then, cut chicken into bite-sized pieces (about 1"). In a medium-large bowl, combine the honey, minced chipotle pepper, grated garlic, taco seasoning, orange juice and zest, salt, and oil. Mix well.

    Add chicken pieces to the seasoning mixture and toss to ensure it's fully coated. You can marinate for up to 45 minutes at this point or continue to skewer them.

    When ready, thread the chicken pieces onto the skewers. If you will be air frying them, set temperature to 400°F and cook for about 10 minutes until the internal temperature reaches 165°F.

    To Grill: Heat grill to about 350 degrees and on a well oiled grill grate, cook skewered chicken for about 5-8 minutes per side until internal temp reaches 165 degrees. Once cooked, drizzle with extra melted honey butter if desired and enjoy!!
