    Apple Bacon Grilled Cheese Sandwiches

    These sandwiches are so tasty! Sweet and salty, with a crispy and buttery toast... and then there's the cheese pull magic. Ooohh! Feel free to swap cheeses and apple varieties for different flavor profiles. This is what you'll need for 2 grilled apple bacon sandwiches:

    Ingredients:

    • 4 slices French bread or Texas Toast
    • 2 Tablespoon butter softened
    • 1/8 teaspoon dried thyme
    • 1/8 teaspoon dried rosemary
    • 1/8 teaspoon sea salt
    • 1/2 small apple Gala, Fuji or Honeycrisp work well
    • 4 stripes bacon, cooked
    • 3 ounces mozzarella cheese
    • 2 slices Havarti cheese

    If your bacon isn't already cooked, start by cooking it in a skillet over medium heat until it reaches your preferred level of crispiness. Once done, transfer the bacon to a paper towel-lined plate to drain excess grease and set aside to cool slightly before assembling the sandwich.

    Next, mix thyme, rosemary, and salt in a small bowl and set aside.

    Spread butter on one side of each bread slice, then sprinkle the herb mixture over the buttered side. Repeat with the remaining slices of bread.

    Flip the bread over and place sliced mozzarella on one slice and Havarti on another. Do the same for the second sandwich.

    Top each mozzarella side with (at least) two slices of cooked bacon.

    Thinly slice half a small apple (about 1/8-1/4 inch thick) using a paring knife or mandoline, and layer the apple slices on the opposite side of the bread with the Havarti cheese.

    Drizzle honey over the bacon and apple slices, then assemble the sandwiches by pressing the two sides together. Repeat for the second sandwich.

    Place the sandwiches in a greased skillet preheated over low heat. Cook each side for 5 minutes on low heat. For the last minute, increase the heat slightly to crisp up the bread, watching closely to prevent burning. If the cheese hasn't melted after 10 minutes, increase the heat gradually until the cheese is melted.

    Once ready, remove the sandwiches from the skillet, slice, and serve with an optional drizzle of honey. Enjoy!
