    Pumpkin Oat Cookies -Only 4 Ingredients

    These cookies are surprisingly good! Very healthy and tasty! Plus, they are a snap to make. If you happen to already have oat flour, by all means, use that. Making oat flour for this recipe isn't a necessity. Although this is a 4 ingredient recipe, I do prefer them with a little chocolate in them. This is all you'll need to make 18 cookies:

    Ingredients:

    • 2 cup plus 3 cups old-fashioned rolled oats
    • 2/3 cup honey, maple syrup, or agave syrup
    • 2 teaspoon pumpkin spice
    • 2 cups pumpkin puree

    Optional:

    • 2 teaspoon vanilla extract
    • 1/2 teaspoon salt
    • 2/3 cup chocolate chips

    First, preheat the oven to 350°F and line two large baking sheets with parchment paper. Set them aside.

    Place 2 cups of oats in a blender and blend on high speed until they turn into a fine flour-like consistency.

    In a mixing bowl, combine the freshly made oat flour, the remaining 3 cups of oats, pumpkin puree, honey, cinnamon, and any optional add-ins you like from the recipe.

    Stir the mixture until it forms a dough. Using a large cookie scoop, portion out the dough and place the dough balls onto the prepared baking sheets, leaving a small gap between each one. You should get about 18 cookies from the dough, making sure not to make them too large as they may be fragile.

    Lightly oil your hands and press down gently on the top of each cookie to slightly flatten them.

    Bake for 15-20 minutes, or until the tops are dry and the cookies have a golden brown color. Let them cool on a wire rack, then enjoy!
