Grill Perfection: These Balsamic Bacon Chicken Kabobs Are Next-Level

These kabobs are a great combination of sweet, salty, and savory. Marinade them for a few hours or overnight for a more developed and richer flavor. Feel free to swap out different vegetables for what is on hand. This is what you'll need to make about 5 servings:

    Ingredients:

    • 1/4 cup balsamic vinegar
    • 2 tablespoons pure maple syrup or honey
    • 1 teaspoon Sazon Seasoning*
    • 1/4 teaspoon sea salt
    • 1 pound boneless, skinless chicken tenders or breasts, cut into bite-size chunks
    • 1 EACH: red and orange bell pepper, deseeded and chopped into bite-size chunks
    • 1 zucchini, chopped into bite-size chunks
    • 1 summer squash, chopped into bite-size chunks
    • 10 slices bacon

If you're using wooden skewers, soak them in warm water for 30 minutes to prevent them from burning.

In a saucepan, mix together balsamic vinegar, maple syrup, seasoning, and sea salt. Simmer for 5 minutes until the mixture thickens. Toss the chicken in the glaze, and for the best flavor, marinate it in the fridge for up to 8 hours.

Thread bacon, chicken, and vegetables onto the skewers, alternating between them. Use two slices of bacon per skewer, weaving them around the other ingredients.

Preheat the grill to medium-high heat or set the broiler to preheat. Grill each side for about 5 minutes, or broil for 8 minutes per side, until the bacon and chicken are fully cooked.

Allow the skewers to rest for 5 minutes before serving. Pair with a cold glass of white wine and enjoy!

    *Notes

We prefer marinating the chicken because it becomes more flavorful. However, it is not required to make this dish.

Sazon seasoning can be made if not available. Just add together: coriander, cumin, achiote, garlic powder, oregano, salt & pepper to taste.
