    Easy and Delicious: Hash Brown Breakfast Casserole

    We love this hash brown breakfast casserole dish. It's very easty and inexpensive to make, plus, you can swap out ingredients or add additional ones that you like! You can also make this the day before and pop it in the oven to bake in the morning. This is what you'll need for 8-10 servings:

    Ingredients:

    • 1 Tablespoon olive oil
    • 12 oz ham, diced
    • 1 red bell pepper, seeded and finely diced
    • 1 green bell pepper, seeded and finely diced
    • 1/2 cup yellow onion, diced
    • Salt and pepper to taste
    • 20 oz fresh or frozen hash browns
    • 12 eggs
    • 1/2 cup heavy cream
    • 1 cup milk
    • 2 cups shredded cheddar cheese
    • 2 Tablespoons chives sliced
    • Cooking spray


    Preheat your oven to 375°F and lightly coat a 9"x13" baking dish with cooking spray.
    In a large pan, heat the olive oil over medium-high heat. Add the onions and peppers, season with salt and pepper, and cook for 3-5 minutes, stirring occasionally, until softened.
    Transfer the cooked vegetables, ham, and hash browns into the prepared baking dish, mixing them together.
    In a medium bowl, whisk the eggs until well combined. Add the cream, milk, and season with salt and pepper. Continue whisking until the mixture is smooth, then stir in the cheese.
    Pour the egg mixture over the ham and vegetables in the baking dish.
    Bake for about 45 minutes, or until the top is golden brown and the center is fully cooked.
    Garnish with chives, cut into squares, serve, and enjoy!


    * Notes:

    You can use either fresh or frozen hash browns for this recipe. No need to thaw if using frozen hash browns—just break them up slightly and add them to the pan.

    You can also add different veggies in this. Sometimes we add mushrooms and cooked sausage for more of a substantial meal.
