    3-Ingredient Peanut Butter Cookies

    Peanut butter cookies!!!! These are so surprisingly tasty for only 3 ingredients! It's written for peanut butter, but really, you can also swap out for a different nut butter. Almond or cashew would be super interesting instead, and in fact, I may just try that next time and let you all know. At any rate, this is all you need to make about 24 small cookies or 12 regular sized cookies:

    Ingredients:

    • 1 cup creamy peanut butter
    • 1 cup light brown sugar (packed)
    • 1 large egg


    Preheat your oven to 350°F and line a baking sheet with parchment paper.

    In a large bowl, beat peanut butter and brown sugar on medium-high speed for about 2 minutes until creamy. Add the egg and mix on low until just combined.

    Use a cookie scoop to portion out tablespoon-sized dough balls and place them on the prepared baking sheet. Lightly grease a fork and press down on each ball twice, forming a crisscross pattern.

    Bake for 7 minutes, or until the edges are lightly browned. Remove from the oven and let the cookies cool on the sheet for 1-2 minutes before transferring them to a cooling rack.

    Enjoy warm or store in an airtight container for later!


    * Notes:

    We like our cookies on the larger side, so we usually double this recipe and make them about 2 tablespoons of dough each.

    You can also roll them in sugar or cinnamon sugar mix prior to baking for an added flair.

    Skip the fork design and push a chocolate kiss in the middle of the hot cookies out of the oven.
