    Ingredients:

    • 1 large head (about 4 cups) of cauliflower, rinsed
    • 3 tablespoons olive oil divided
    • 1/2 teaspoon sea salt
    • 1/4 teaspoon ground black pepper
    • 1/2 cup Panko bread crumbs
    • 3/4 cup grated Parmesan cheese
    • 2 teaspoon garlic powder
    • 1 tablespoon Italian seasoning

    Optional Garnishes

    • Chopped parsley, lemon wedges

Break the cauliflower into medium-sized florets, cutting any large ones in half to expose more flat surfaces for better crumb adhesion. Preheat your oven to 400°F and line a large baking sheet with parchment paper, generously coating it with olive oil or cooking spray.

In a large bowl or resealable bag, toss the cauliflower florets with 2 tablespoons of olive oil until evenly coated. Season with salt and black pepper, then toss again to combine.

In a separate medium bowl, mix together the panko breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning. Drizzle the remaining oil over the crumb mixture and stir until well combined.

Sprinkle the panko mixture evenly over the prepared baking sheet. Arrange the cauliflower florets flat-side down in a single layer on top of the crumbs, pressing each floret lightly to help the coating stick. Leave space between the florets to promote air circulation for a crispier result.

Bake for 18-20 minutes, or until the breadcrumbs turn golden brown. Remove the cauliflower from the oven, flip the florets with a spatula, and bake for another 4-5 minutes. Once done, garnish with freshly chopped parsley, serve warm, and enjoy!
