    Restaurateur Behind Sabio on Main Is Debuting a New Concept in Danville

    According to Diablo Mag , the chef behind Pleasanton’s Sabio on Main — an eatery and wine bar known for seasonal California cuisine — is debuting a new dining concept in Danville.

    Coming to 312 Railroad Avenue , Crush’d will land near establishments such as Cocina Hermanas, Crumbs Breakfast, Lunch & Bar, and Danville Harvest.

    Owner Chef Francis X. Hogan — “a certified member of the butcher’s guild, cheese specialist and Level 1-certified sommelier from the Court of Master Sommeliers” — tells the Journal, “We’re really focused on changing the narrative about wines on tap.”

    “The new spot will offer 24 wines on tap, charcuterie, cheese and seasonal small plates, and a gourmet mini-market beginning in mid-June,” the article states.

    For readers who are unfamiliar with Sabio on Main, the concept was founded in 2015 and is a collaboration between Hogan and Jim McDonnell , Pivot’s owner and a technology entrepreneur.

    “The relationships I have with my farmers, ranchers, and fishermen are the foundation of everything we do at Sabio. Without their tireless dedication we couldn’t accomplish our goal of serving the best quality, sustainable, seasonal ingredients in an innovative yet familiar style,” Hogan shares on the Sabio website.
