    Here's an easy recipe for one of my family's favorites. You'll want to add this to your monthly menu.

    One Pot Beef Stroganoff Recipe

    Ingredients:

    1 lb of stripped steak (flank, skirt, hangar, or ribeye)

    1 small onion, diced

    3 cloves garlic, minced

    8 oz mushrooms, sliced

    2 cups beef broth

    1 cup milk

    2 cups egg noodles

    1 cup sour cream

    2 tbsp flour

    2 tbsp olive oil

    Salt and pepper to taste

    Fresh parsley, chopped (for garnish)

    Instructions:

    1. Heat the olive oil in a large pot over medium-high heat.

    2. Add the ground beef and cook until browned. Remove the beef from the pot and set aside, leaving some drippings in the pot.

    3. Add the onions to the pot and sauté until translucent, about 3-4 minutes.

    4. Add the garlic and mushrooms, cooking for another 2-3 minutes until the mushrooms are tender.

    5. Return the beef to the pot. Sprinkle with flour and stir well to combine. Cook for 1-2 minutes to eliminate the raw flour taste.

    6. Pour the beef broth and milk, stirring constantly until the mixture thickens.

    7. Add the egg noodles, ensuring they are mostly submerged in the liquid. Bring to a boil, then reduce to a simmer. Cover and cook for 8-10 minutes, stirring occasionally, until the noodles are tender.

    8. Stir in the sour cream until well combined—season with salt and pepper to taste.

    9. Garnish with fresh parsley before serving.

    Helpful Tips:

    Use fresh mushrooms for the best flavor. Baby Bellas or creminis work well.

    Don’t overcook the noodles. They will continue to absorb liquid even after you remove the pot from the heat.

    Adjust the consistency. If the sauce is too thick, add a bit more beef broth or milk. If it's too thin, let it simmer uncovered for a few minutes longer.

    Sour cream substitution. If you don’t have sour cream, plain Greek yogurt works as a great substitute.

    Leftovers. Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or microwave, adding a splash of beef broth if needed to loosen the sauce.
