    Cozy Pumpkin Banana Oat Cookies: A Delightful Fall Treat!

    Pumpkin spice everything is happening these days, and for good reason! This is the season for coziness and comfort, and that's just what these delicious cookies bring. This recipe makes about 48 servings. Enough to enjoy and to pass out to family and friends.

    Just make sure to let completely cool before eating, so that they will retain their shape.

    You can mix in chocolate chips if preferred, or dip half in melted white chocolate!

      • Spice Mix: 1 tbsp pumpkin pie spice
      • Dry:
        • 3 cups old-fashioned oats
        • 1 2/3 cups all-purpose flour
        • 1 tsp baking soda
        • 1/2 teaspoon salt
      • Cookie batter:
        • 1 cup unsalted butter (softened)
        • 1 cup granulated sugar
        • 3/4 cup brown sugar (packed)
        • 1 egg yolk
        • 2 tablespoons molasses
        • 2 tsp vanilla extract
        • 1/2 cup pumpkin purée
        • 1/2 cup mashed banana
    • Instructions:
      1. Preheat oven to 350°F; line baking sheets.
      2. Whisk dry ingredients and spice mix in a small bowl.
      3. In a stand mixer, cream together the butter and sugars until fluffy And smooth.
        Add in the egg yolk, vanilla, and molasses; mix well until combined, Then add pumpkin and banana.
      4. Gradually mix in the dry ingredients until just combined.
      5. Scoop 1 ½ tbsp dough onto sheets, spacing 3 inches apart; lightly flatten each ball, with back of a spoon.
      6. Bake for 11-13 minutes until edges are golden. Enjoy!
