    Tex-Mex Tater Tot Casserole


    Ingredients:

    - 1 pound ground beef

    - 1 small onion, diced

    - 1 red bell pepper, diced

    - 1 can of black beans, drained and rinsed

    - 1 can of corn, drained

    - 1 packet of taco seasoning

    - 1 can of diced tomatoes

    - 1 cup of salsa

    - 2 cups of shredded cheddar cheese

    - 1 bag of frozen tater tots

    - Salt and pepper to taste

    - Optional toppings: sour cream, sliced jalapeños, chopped cilantro


    Instructions:

    1. Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.

    2. In a large skillet, cook the ground beef over medium heat until browned. Add the diced onion and red bell pepper, and cook until softened.

    3. Stir in the black beans, corn, taco seasoning, diced tomatoes, and salsa. Cook for a few minutes until heated through.

    4. Spread the beef mixture evenly in the bottom of the prepared baking dish.
