    Blueberry Lemon Shortbread Streusel Bars


    Shortbread Crust & Streusel Topping:

    - 1 cup unsalted butter, melted

    - ½ cup granulated sugar

    - 2 teaspoons vanilla extract

    - ½ teaspoon salt

    - Zest of one lemon

    - 2 cups all-purpose flour


    Filling:

    - 8 ounces cream cheese, softened

    - 1 cup granulated sugar

    - Zest of one lemon

    - 2 large eggs

    - 5 ounces yogurt or sour cream

    - 2 teaspoons fresh lemon juice

    - ¼ teaspoon salt

    - ½ cup  all-purpose flour

    - 3 cups  blueberries, fresh or frozen


    Instructions:

    1. Preheat the oven to 350ºF (177ºC) and line an 8" x 8" (or 9" x 9") baking pan with foil, leaving an overhang on the sides.

    2. For the shortbread crust, mix melted butter, sugar, vanilla extract, salt, and lemon zest in a bowl. Add flour and stir until combined. Press most of the mixture into the prepared pan, reserving some for later.

    3. Bake the crust for 18 minutes while preparing the filling.

    4. For the filling, beat cream cheese, sugar, and lemon zest until smooth. Add eggs, yogurt, lemon juice, salt, and flour, mixing until combined. Gently fold in blueberries.

    5. Pour the filling over the crust, add a few blueberries on top, then crumble the reserved crust over the filling.

    6. Bake for 55-60 minutes until a toothpick inserted in the center comes out clean. Cool, chill, and cut into squares before serving.
