    • - 1 cup shredded sharp cheddar cheese  
    • - 1 cup milk, warmed (adjust as needed)  
    • - Salt, to taste  
    • - Black pepper, to taste  
    • - Optional toppings: thinly-sliced green onions, extra shredded sharp cheddar cheese  

    Preparation:

    1. Bring a large pot of salted water to a boil. Add the roughly cut potatoes and cook until tender, about 15-20 minutes.

    2. While the potatoes are cooking, melt 2 tablespoons of butter in a skillet over medium heat. Add the diced onion, green bell pepper, red bell pepper, and jalapeño. Sauté until the vegetables are soft, about 5-7 minutes.
