    Salted Honey Pie

    Ingredients

    • - Pie crust, refrigerated or homemade  
    • - 1/2 cup honey  
    • - 4 large egg yolks  
    • - 2 1/2 cups heavy cream  
    • - 1/3 cup cornstarch  
    • - 1/2 teaspoon salt  
    • - 2 teaspoons vanilla extract  
    • - Sea salt, for garnish  (make it extra special by using lava salt, colored sea salt such as Purple Bamboo or Blue Spirulina, or gourmet salt)

    Preparation

    1. Prepare the pie crust in a deep dish 8-inch pie pan or a 9-inch pie pan and set it in the fridge. Do not pre-bake it. Preheat your oven to 375°F (190°C).

    2. In a large bowl, lightly beat the egg yolks and set aside.

    3. In a medium saucepan, heat the heavy cream, brown sugar, cornstarch, and salt over medium heat until it comes to a rolling boil, stirring regularly. The mixture should start to thicken.

    4. Once the mixture boils, remove it from the heat. Temper the egg yolks by whisking in a little of the hot cream mixture, then gradually add the remaining cream mixture until smooth.

    5. Stir in the honey and vanilla extract, mixing until well combined.

    6. Pour the mixture into the chilled pie crust and bake for 40-45 minutes, until the pie is bubbling and starting to brown on top.

    7. Remove from the oven and let cool until it reaches room temperature. The pie will firm up as it cools.

    8. Refrigerate the pie until it’s cold and fully firm. Before serving, sprinkle with sea salt for an added touch.
