    One Pot Mexican Rice Casserole Recipe

    Ingredients:  

    • 1 pound ground beef  
    • 1 small onion, diced  
    • Salt and pepper, to taste  
    • 2 tablespoons taco seasoning  
    • 1 teaspoon garlic powder  
    • 1 cup long grain white rice (see note below)  
    • *1 1/2 cups beef broth  
    • 1 15-ounce can of corn, drained  
    • 8 ounces tomato sauce  
    • 1/2 cup salsa  
    • 1 cup shredded cheese  

    Instructions:  

    1. In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and fully cooked. Drain any excess grease.  

    2. Season the beef with taco seasoning, garlic powder, salt, and pepper. Stir to combine.  

    3. Add the rice, beef broth, corn, tomato sauce, and salsa to the skillet. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes, or until the rice is fully cooked.  

    4. Once the rice is done, remove the skillet from the heat. Sprinkle shredded cheese evenly over the top of the casserole.  

    5. Cover the skillet and let the cheese melt for a few minutes before serving.  

    Note: If using instant rice, adjust the cooking time according to package instructions.
