Fun Fact: Scalloped Potatoes vs. Potatoes au Gratin
Though they are often used interchangeably, scalloped potatoes and potatoes au gratin are technically different dishes. Scalloped potatoes are typically cooked in a creamy sauce, while potatoes au gratin are made with breadcrumbs and cheese. However, this cheesy scalloped version bridges the gap between both styles by incorporating delicious layers of cheese for the ultimate rich and comforting experience!
Storage and Reheating Tips
Leftover scalloped potatoes can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, simply place in the microwave or oven at 350°F until heated through. For best results, cover with foil when reheating in the oven to prevent the top from drying out. You can also freeze the dish before baking if you want to prepare it ahead of time. Just assemble, freeze, and then bake directly from frozen (adding about 10-15 minutes to the baking time).
Cooking Tips
For a lighter version, you can substitute half of the cream with chicken broth. If you prefer a little extra depth of flavor, sprinkle in a pinch of nutmeg along with the thyme. You can also add crispy bacon or ham for a heartier dish, or swap the cheese for Gruyère or Parmesan for a twist on the flavor profile.

Homemade Cheesy Scalloped Potatoes Recipe
Ingredients:
6 Russet potatoes, washed and sliced
4 tablespoons butter
½ onion, sliced
4 cloves garlic, minced
¼ cup flour
1 ½ cups milk
1 cup chicken or vegetable broth
1 tablespoon fresh thyme
1 teaspoon salt
½ teaspoon black pepper
½ cup Monterey Jack cheese
1 ½ cups cheddar cheese
Instructions:
Over medium heat, melt the butter in a large skillet. Add the sliced onions and minced garlic, then sauté for 4-5 minutes, stirring occasionally to prevent burning.
Add the flour to the skillet, stirring to coat the vegetables evenly, and cook for 1-2 minutes.
Slowly whisk in the chicken or vegetable broth, stirring to remove any lumps, and cook for 1-2 minutes.
Pour in the milk and whisk to combine. Continue cooking for another 2-3 minutes, stirring constantly to prevent burning. Remove the skillet from heat and set aside.
Preheat your oven to 400°F and prepare a 9"x13" baking dish by greasing the bottom and sides with butter.
While the oven is heating, wash and peel the potatoes if desired, then slice them into ⅛" thick slices.
Layer half of the potato slices in the bottom of the prepared baking dish. Top with half of the sauce, followed by all of the Monterey Jack cheese and half of the cheddar cheese.
Add the remaining potato slices in a second layer, then top with the rest of the sauce and the remaining cheddar cheese.
Cover the baking dish with foil and bake in the preheated oven for 20 minutes.
After 20 minutes, remove the foil and continue baking for an additional 25 minutes, or until the top is golden brown and bubbly.
Remove from the oven and let the dish stand for a few minutes before serving. Garnish with freshly chopped parsley or green onions if desired.
Optional Variations
For a smoky flavor, try adding diced ham or cooked bacon between the layers of potatoes. If you prefer a different cheese, Gruyère or Parmesan make excellent substitutions. To add a bit of spice, sprinkle in some crushed red pepper flakes or a dash of paprika. You can also use Yukon Gold or red potatoes for a slightly different texture and flavor.
