Storage and Reheating Tips
Leftovers (if there are any!) can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, simply pop a portion in the microwave for about 1 minute, or until heated through. You can also warm it in the oven at 350°F for about 10 minutes to maintain that crispy Dorito topping.
Cooking Tips
For an extra kick, try using spicy nacho Doritos or adding a bit of hot sauce to the chicken mixture. If you want a bit more crunch, sprinkle some crushed Doritos on top right before serving. If you’d like to make the dish a little more filling, you can add a cup of cooked rice or black beans to the chicken mixture.

Doritos Chicken Casserole Recipe
Ingredients:
11 ounces Nacho Cheese Doritos
2 cups cooked shredded chicken
1 can (10 oz) cream of chicken soup (or use a homemade substitute)
1 cup sour cream
8 ounces grated cheddar cheese
1 can (10 oz) Ro*Tel tomatoes and chiles
1 teaspoon cumin
1 teaspoon chili powder
½ cup pico de gallo
Instructions:
Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 baking dish or spray with non-stick cooking spray.
Prepare the Filling: In a medium-sized bowl, mix together the cooked shredded chicken, cream of chicken soup, sour cream, half of the grated cheddar cheese, Ro*Tel tomatoes and chiles, cumin, and chili powder. Stir until all ingredients are well combined.
Layer the Doritos and Chicken Mixture: Crush half of the bag of Doritos and spread them evenly across the bottom of the prepared baking dish. Then, spoon the chicken mixture over the crushed Doritos and spread it out evenly. Crush the remaining Doritos and sprinkle them over the top of the chicken mixture.
Add Cheese and Bake: Sprinkle the remaining cheddar cheese evenly over the top of the casserole. Place the dish in the preheated oven and bake for 20 minutes, or until the cheese is melted and bubbly.
Garnish and Serve: Once the casserole is out of the oven, top it with the pico de gallo for a fresh and colorful garnish. Serve hot and enjoy the cheesy, crunchy goodness!
Optional Variations
For an extra layer of flavor, consider adding cooked bacon crumbles or black beans to the chicken mixture. You can also switch out the cheese for pepper jack if you prefer a spicier kick. For a lighter option, swap the sour cream for Greek yogurt and use baked chips instead of regular Doritos.
