    Popular Hawaiian Fusion Food Truck to Open First Brick and Mortar Restaurant in Eureka

    The phenomenal Eureka-based Hawaiian fusion food truck, Pineapple Express , is getting one step closer to opening its first brick and mortar restaurant. The business posted on Facebook last week , announcing they’ve officially begun the hiring process for the permanent location.

    According to news reported by Redwood News , Pineapple Express plans to take over the former space for Humboldt Soup Company at 1019 Myrtle Avenue . Codi Nishimoto , owner of Pineapple Express, told Redwood News that the community’s warm welcome and the building’s drive-thru aspects were both key reasons why she chose to move forward with the location.

    “Everyone up here has been super amazing,” Nishimoto said. “It was like the coolest, warmest welcoming that we could ever ask for. I think that, that gave us the confidence to go forward,” Nishimoto told Redwood News.

    Having relocated from Southern Humboldt to Northern about a year ago, Pineapple Express has quickly become a flavorful phenomenon in the Eureka community. The dishes are inspired by traditional Japanese and Hawaiian cooking and draw inspiration from other Asian regions as well, such as Thailand and Korea. The menu highlights nutritious plate lunches like the Sho Yu Chicken, Island Style Fish & Chips, fan favorite appetizers like the Kalua Pig Fries and Miso Hungry Salad, handheld sandwiches, and fresh bowls.

    The Pineapple Express food truck and trailer will continue to operate as usual, available for catering and special events, although the company hasn’t announced where they plan to park the main food truck. As for the new restaurant, Nishimoto mentioned to Redwood News that the new space will also have “live music, a one-seat swing, a backdrop area for customers to take pictures and a surfboard bar.”
