    Our garden is producing an impressive amount of zucchini and apples this year! With so much produce, we decided to make zucchini bread. Specifically, Zucchini Apple Carrot Bread, which can be enjoyed plain or with cream cheese icing for a dessert twist.

    This bread is a fantastic way to incorporate more fruits and vegetables into your diet. It's moist, delicious, and sure to be a hit with the whole family!

    Ingredients

    • 2 sticks unsalted butter
    • 2 cups sugar
    • 3 large eggs
    • 1/4 cup milk

    7. Gradually add the flour and mix until just combined.
    8. Fold in the shredded carrots, zucchini, and diced apples.
    9. Divide the batter evenly between the two loaf pans.
    10. Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.

    Optional: Cream Cheese Frosting

    For a sweeter option, try this cream cheese frosting:

    • 1/4 cup softened cream cheese
    • 1/4 cup softened butter
    • 2 cups powdered sugar
    • A few drops of milk (to reach desired consistency)

    Mix the softened cream cheese and butter together, then gradually add the powdered sugar. Add milk as needed to reach your desired consistency.
