    Connecticut's own Kathleen Ashmore is known all over social media for her viral 'Kat Can Cook' videos on Tiktok and Instagram. She is also a mom, wife, and a professionally trained private chef with an exciting clientelle. Kat Ashmore is also a former producer and recipe developer who worked for the 'Lifestyle Brand Goddess' herself, Martha Stewart, for many years. She is a Connecticut native who currently lives in Rowayton, Connecticut with her husband and children.

    One of the things I love about Kat's recipes is how easy they are, not to mention so tasty and healthy too. Especially, when you can put clean ingredients together into a crockpot and the outcomewill be a delicious meal that you and your entire family can enjoy. And with minimal prep the 'slow cooking' of your crockpot really does all the work for you.

    We can start with breakfast and Kat's popular oatmeal that is so perfect for the Fall and Winter months. Her Slow Cooker Apple Pie Oatmeal and her Slow Cooker Banana Bread Oatmeal are the hot new trend. If you love oatmeal these two viral oatmeal recipes are for you. Kat says on her website that they are ''a sweet and healthy way to start your day, and the best part is it only takes 5 minutes to prepare.''

    A great lunch or dinner idea is Slow Cooker Banh Mi Bowls packed full of protein and flavors. Kat says this dish is ''based off of the classic Vietnamese sandwich Banh Mi, where a baguette hosts flavorful meat and pickled vegetables in the perfect savory, tangy complimentary way. I’ve taken these flavors and applied them to dinner, and what you’ve got is a really flavorful, easy...''

    Another great Crockpot meal is her Braised Pork dish, which is Gluten-free and Keto friendly. I love to couple this with her Slow Cooker Mashed Potatoes, which is a healthy alternative to regular mashed potatoes. The last dish is not a 'slow cooker' meal but her Dutch Oven Pot Roast that i couldn't resist telling you about. It's not just an epic meal of tender meat, but you also get delicious root vegetables such as carrots, parsnips, onions and potatoes.
