Belly BBQ to Bring Southern Flavors to Folsom this Summer

A new BBQ restaurant featuring southern flavors is on its way to Folsom, according to news reported by the Sacramento Business Journal . Belly BBQ is taking over a vacant space at 1760 Prairie City Road, Suite 120 in Folsom. The restaurant is slated to open in the summer.

Founded by Georgia native Marcus Randolph , Belly BBQ is coming in with the ambition to provide a BBQ experience for the Sacramento area like no other. The restaurant will feature two massive smokers: one Mill Scale 500-gallon smoker built in Texas, and a 1,000-gallon being built by Rogue Smokers in Roseville. “We preferred at least one Texas built smoker because we wanted to show our appreciation as a nod to the heritage of what is considered the best bbq in the country,” Randolph told What Now Sacramento in an email.

Both smokers will be offset smokers for valid reasons. Randolph told us: “The difference with offset smokers is that you build a more complex flavor profile from the different types of wood. Different woods give different flavors. These flavors become more noticeable as the food is cooked over a length of time.”

Belly BBQ plans to offer a menu full of slow-cooked meats and various sides. Randolph recommends guests try the brisket, pork ribs, and sausages, highlighting that the sausages are all handmade in-house. As for the sides, Randolph told What Now Sacramento that they are “extensions of our favorite family recipes that we brought from Georgia” and are “true Southern flavors.”

The restaurant is planning for a soft opening in May and a tentative grand opening in June, and Randolph recommends staying tuned to Belly BBQ’s website for any changes in the schedule. “We have felt very supported in bringing this to fruition. Our family, friends and neighbors have been very encouraging the closer we get to opening. We can’t thank this community enough for their support,” Randolph said.
