    You’re Storing Your Coffee Wrong — Here’s What to Do Instead, According to a Coffee Roaster

    Whether you kick off each morning with your espresso machine , French press , or coffee maker , the beans are really where a good cup of coffee starts. Through all the fuss with varied grind levels to nuances in water temperature, we often overlook one of the most important aspects of making coffee: bean storage. When we talked to expert roaster Heather Calatrello about how to store coffee , she gave one rule of thumb: “Keep it away from air, moisture, heat, and light. When coffee beans are exposed to these elements, they can quickly degrade in quality.”

    This means you should stay away from clear storage canisters, which expose your beans to light, and definitely don’t put them in the freezer or fridge, since coffee beans are happiest between “50 and 70°F,” according to Calatrello. What should you use instead? Calatrello recommends an opaque airtight canister that’s kept in a cool, dark, and dry place.
