    Six-ingredient easy microwave peanut brittle recipe for the holidays

    Nobody will ever guess this foolproof peanut brittle recipe was made in the microwave, and it takes mere minutes.

    The holidays are busy enough without having to deal with fussy, complicated, overinvolved recipes. So when I discover something that is both tasty, and easy to make, I like to stick with it.

    There are many iterations of this recipe online, like this one from Allrecipes, but I got my version from my mom years ago.

    If I could make this recipe turn out perfectly when I was a college student with very little baking experience, anyone can do it.

    Easy microwave peanut brittle

    Ingredients

    • 1 cup white sugar
    • 1 cup peanuts
    • 1/2 cup light corn syrup
    • 1 Tablespoon butter
    • 1 teaspoon vanilla
    • 1 teaspoon baking soda

    Directions

    1. Line a baking sheet with foil, shiny side up, and spray with cooking spray.

    2. Combine the sugar, salted peanuts, and corn syrup in a microwave-safe bowl. My mom's original recipe told me to "mix them as best you can."

    3. Microwave for 3 minutes. Pull out and stir.

    4. Microwave another 3 to 4 minutes. Pull out and add butter and vanilla. Stir.

    5. Microwave for 2 minutes.

    6. Pull out and add baking soda. Stir.

    7. Pour the mixture onto your baking sheet with foil and gently spread it out.

    8. Let cool and break into pieces.

    Notes

    • You may need to adjust microwave times. High-wattage microwaves may need fewer minutes. Watch it closely the first time you make it to prevent burning until you get the times right. You are looking for a golden brown color at the end of cooking. If it gets too dark, you will end up with a burnt flavor.
    • My mom's original recipe called for raw peanuts. I've used salted peanuts as well, and it turned out fine.
    • It doesn't have to be peanuts. You can make any kind of nut brittle you want. Cashews are delicious in this recipe as well.
    • For easy cleanup, wash your bowl quickly with hot water as the corn syrup will set fast.
