Sometimes you have a craving for something sweet but you don't want to go to a lot of trouble. This microwave mug cake is perfect for an easy summer treat when the weather is hot and you don't want to heat up your kitchen by baking in the oven.

Tip: Be sure not to overcook the cake. It will continue to set as it cools and the inside will remain soft.

    Ingredients

    • 3 Tablespoons flour (all-purpose flour, whole wheat flour, or almond flour)
    • 1 Tablespoon cocoa powder (unsweetened)
    • 2 Tablespoons sugar
    • 1/4 teaspoon baking powder
    • 1 dash of salt
    • 3 Tablespoons milk (any kind will work, dairy or non-dairy)
    • 1 Tablespoon canola oil (or avocado oil, grapeseed oil, melted coconut oil, or melted butter)
    • 1/8 teaspoon vanilla extract
    • 1 teaspoon chocolate chips (optional)
    • whipped cream (optional)

    Method

    1. Mix dry ingredients (flour, cocoa powder, sugar, baking powder, and salt) in a microwave-safe mug.
    2. Add milk, oil, and vanilla. Mix well until no dry flour remains. Be sure to scrape the bottom of the mug.
    3. If using chocolate chips, gently fold them in.
    4. Cook in the microwave for 90 seconds to 2 minutes (Microwave times will vary, you can check after 60 seconds to see if it is set.) Don't overcook.
    5. Let set for 1 minute. The cake will set as it cools and will be nice and moist.
    6. Top with whipped cream if desired. This is also delicious with a scoop of ice cream.
