Quick and Easy Focaccia Bread Recipe That’s Ready in an Hour

I used to think homemade focaccia bread took hours until I came across an amazing recipe. Food blogger, Family Friends Food has developed a focaccia recipe that only takes one hour from start to finish (including rise times!)

The secret -- she has short rise times, and then places the dough in a COLD oven. As the oven heats up, the dough rises beautifully. You've got to give it a try!

Her recipe is below with some of my own alternations - I've also converted measurements from British to American. Or you can check out the original recipe here.

    Ingredients

    • 2 cups all-purpose flour
    • 1/2 teaspoon salt
    • 1 tablespoon sugar
    • 2-1/4 teaspoons yeast (instant or active-dry)
    • 1/2 cup warm water
    • 1/2 cup extra virgin olive oil
    • your choice of toppings such as sea salt, caramelized onions, rosemary, sundried tomatoes, roasted red peppers, or kalamata olives

    Directions

    1. Add the flour, salt, sugar, yeast, and 3 tablespoons of the oil into a mixing bowl or stand mixer bowl. If mixing by hand, mix with a spoon until you have a shaggy ball, and then knead by hand on a lightly floured surface until it is smooth and silky. Alternatively, use the dough hook in your stand mixer and mix until the dough is smooth and elastic.

    2. Place the dough ball in a lightly oiled bowl covered with a hand towel. Put the bowl in a very warm place for 5 minutes.

    3. Grease the base of a 9x13 baking pan with 2 or 3 tablespoons of olive oil.

    4. Place your dough into the baking pan and gently pat it into the shape of the pan until the thickness is even across.

    5. Now cover your baking tin with a hand towel and place in a warm place for 15 minutes.

    6. After 15 minutes, use your fingers to poke deep holes into the dough. Brush the remaining olive oil and top with salt and rosemary (or your choice of toppings.)

    7. Put your pan in a cold oven (DO NOT PREHEAT). Turn the heat to 400 F and bake for about 20 to 25 minutes.

    8. Your bread is done when it's well-risen and the top is golden brown.
