    Baristas, business owners living out their coffee shop, airstream dreams in Our Town Forsyth

    FORSYTH, Ill. (WCIA) — When you get your daily dose of coffee in the morning, maybe you’re brewing it at home or picking it up on your way out the door.

    But in Our Town Forsyth, there’s one spot that’s not like the others — 121 Coffee Run !

    “Everybody loves an airstream! Airstreams are just cool!” Skye Williams, one of the co-owners, joyfully explained.

    In this particular airstream, you can get all the ingredients you need to start your day.

    “We have way more than just coffee, we have lotus energy drinks, wraps, salads, all kinds of things,” Aryn Callarman, the owner, explained.

    The journey started about four years ago when Callarman bought a coffee shop closing in Warrensburg. Now, the airstream in Forsyth is the fifth location.

    “It’s so crazy. I never thought we would expand past one,” she said.

    But, Callarman and Williams are sure glad it did. In fact, Williams changed her whole career trajectory. Originally, she was going to work in environmental curriculum.

    “This was not the plan but I loved it too much to stop,” Williams said. “Very quickly turned into a full-time job, manager, and now I bought in as co-owner.”

    When asked about her favorite part of it all, she was quick to talk about the town’s support every step of the way.

    “We get our regulars that come through six times a week,” Williams said. “We get to know them on a schedule, we can pretty much guess their order as soon as we see their car in the parking lot.”

    Each order is a little different. Some involve flavored syrups, ice, cold brew and locally-produced dairy. The heavy cream and milk come from Kilgus Farmstead in Fairbury. Plus, the espresso beans are from Mad Goat Coffee based out of Danville.

    Callarman is happy to keep things local and have her dream coffee shop just down the street from where she grew up.

    “Forsyth has been so welcoming and so friendly. I just love being here,” she said.

    You can find the airstream at the corner of US 51 and Ruehl Street next to Briggs Republic Doggy Daycare . 121 Coffee Run also has locations in Warrensburg, Decatur, Moweaqua and Harristown.
