    Look inside new Fort Worth burger joint that serves wagyu, PB&J and brussel sprouts

    Step aside, Whataburger, a burger joint serving wagyu beef burgers and booze, is now open in Fort Worth.

    Son of a Butcher is casual dining but elevated . It produces funky takes of the classic American slider but with chef-driven flavor combinations. Not to mention that you don’t even have to leave your car to order since they have a drive-thru window.

    “The reason we chose sliders was because we love the idea of being able to mix and match and try different flavors,” said Tim Timbs, vice-president of operations for the restaurant.

    The menu options are uncommon, like a “PB+J Wagyu” slider with blackberry jam and crunchy peanut butter. As well as a “Burnt Ends Wagyu” slider that has smoked brisket and housemade BBQ sauce. All this and more for around the same price as a Five Guys combo.

    “So part of our brand DNA, part of what we are built around is local love and supporting local communities,” said Jens Pederson, general manager of Son of a Butcher Alliance. “Both in the way that we employ people by taking care of them, but also by buying from local vendors.”

    The Star-Telegram got a taste of the new digs. Here is what we thought.

    Son of a Butcher offers not just a drive-thru but also a dining room and a fully covered patio. But what makes it stand out from the typical In and Out is its menu.

    They have a rotating menu called “ Butcher Special ” where flavors are rotated. For example, the restaurant does a chili burger in honor of the Texas State Fair. They also served a lobster burger served with champagne for Valentines Day. The Alliance location will gain the Butcher Special program in the coming months.

    Beginning with the beef, Son of a Butcher only uses wagyu beef patties, a large step up from the mystery meat most fast casual dining spaces offer.

    The wagyu beef burgers come with a variety of flavor options:

    • All American : Double wagyu pattie with double American cheese, lettuce, tomato, pickle and onion. ( Crowd favorite according to Pederson)

    • Burnt Ends: Smoke brisket, yellow cheddar, pickled red onion, rosemary aioli and house BBQ sauce.

    • Classic: Comeback sauce, American cheese and pickle. (Another crowd favorite per Pederson)

    • The Popper: Fried jalapeno and cream cheese, pepper jam, bacon, cilantro and rosemary lime aioli.

    • PB&J : Blackberry jam and crunchy peanut butter, bacon, American cheese and caramelized onion.

    • The Cowboy: Peppered bacon, pimento cheese, caramelized onion and jalapeno cilantro aioli.

    For those who prefer chicken, the menu has several items, too:

    • Comeback: Fried chicken, American cheese, comeback sauce and pickle.

    • Nashville Hot: Fried chicken, pimento cheese, hot sauce and pickle.

    • Frikka Tikka: Fried Chicken, paneer cheese, cilantro, basil, pickled red onion, raita lime mayo and spicy tikka sauce.

    Not that sides should be a main character, but they can be considered for that role here. The Son of a Butcher Onion Rings are larger than the sliders. And for another unique offering other than basic fries (though their sweet potato fries are yummy), Son of a Butcher also has Thai Chili Brussel Sprouts .

    The perfect way to close out a meal is always with something sweet. This burger joint offers eight different shakes, and you make them with booze:

    • Vanilla

    • Chocolate

    • Strawberry

    • Chocolate Brownie: Chocolate sauce and brownies.

    • Cookie Butter: Cookie butter, caramel sauce and Biscoff cookie & crumbles.

    • Red Velvet: Red velvet cake, cream cheese icing, chocolate sauce, chocolate chips and red sprinkles.

    • Salted Caramel Pretzel: Pretzels and salted caramel sauce.

    • Cookie Dough: Chocolate chip cookie dough and chocolate sauce.

    To order, guests can mix and match the flavors into combo deals. You can get three sliders (with fries or onion rings with a non-alcoholic drink as combo deal) for $15.99 or two slider combo for $12.99. They also offer a one slider and two chicken tender deal for $11.99.

    Son of a Butcher began at Legacy Hall in Plano in 2019. It has now expanded to its fourth location here in Alliance Town Center in Fort Worth , with two other brick and mortar stores in Grapevine and Lower Greenville.

    While you can order online or for pick-up, Son of a Butcher also offers catering with boxes of 24 or 48 mix and match sliders. They have also begun catering with on site cooking, which is perfect for late night snacks at weddings.

    The newest location is at 9649 Sage Meadow Trail. It is open daily Monday to Wednesday from 11 a.m. to 10 p.m., Thursday from 11 a.m. to 11 p.m., Friday from 11 a.m. to midnight, Saturday from 10 a.m. to midnight, and Sunday from 10 a.m. to 10 p.m.
