Boulder butcher shop has some of the ‘finest cuts of meat in America’

DENVER ( KDVR ) — A local meat market, known for cuts you can’t find in the grocery store, was named one of the best butcher shops in the country.

USA Today’s 10 Best looked into shops with the finest cuts in America and deemed Blackbelly Market and Restaurant in Boulder as one of the top 10 best butcher shops in the U.S.

The butcher shop on Conestoga Street said it prides itself in providing cuts you won’t find in a grocery store and working with local ranchers and farmers that are just down the road from the shop.

USA Today specifically cites it as the only whole animal shop in Boulder that cures and ferments its own meats as well as one of the top catering companies in the city.

“We’re the only operation in Boulder licensed to make and sell our own house-cured and fermented meats, salamis, charcuterie. It’s certainly a specialized experience at Blackbelly Market, which we couldn’t be happier to provide for our community,” Blackbelly told FOX31.

Blackbelly has won a handful of awards over the past year, including a Michelin green star for sustainability as well as a Michelin Culinary Professional Award , which went to their head butcher Kelly Kawachi.

The shop just opened a Denver location at 41st Avenue and Tennyson Street in March, which serves up the same standard, just in a different city.
