A New Breakfast Joint Is Coming to Gilroy

According to a recently submitted permit application, a new eatery listed as Eggs & Waffles is coming to Gilroy.

Taking over a space at 741 1st Street , the restaurant will land near establishments such as Pineapple Village, Super Burger Drive-in, and Wienerschnitzel.

What Now San Francisco contacted the concept’s owner, Yadwinder Singh , to inquire about the upcoming diner, but he could not provide additional information before the time of publication.

Nevertheless, based on the filing, it’s confirmed that the business intends to sell beer and wine.

An opening date has not been announced yet, so stay tuned for updates.
