    Alright, brace yourself for a flavor fiesta because we're diving into the delicious world of Nacho Stroganoff! This mouthwatering dish is a playful twist on the classic stroganoff, blending the creamy richness of the original with the zesty kick of nachos. Picture your favorite nacho toppings cozying up to a velvety stroganoff sauce over a bed of noodles. Yep, it's as indulgent as it sounds.

    Ingredients:

    • 1 pound of lean, ground beef
    • 1 pound of fusilli pasta, or egg noodles
    • 4 cups of egg noodles
    • 3 tablespoons of self-rising flour
    • 1/2 teaspoon of seasoning salt
    • 1/2 teaspoon of freshly ground black pepper
    • 2 teaspoons of canola oil
    • 3 cups of beef broth
    • 2 cups of sour cream or plain Greek yogurt
    • 2 cups of shredded cheddar, Monterey Jack, and mozzarella cheese
    • 1 bell pepper, chopped (optional)
    • 3 to 4 jalapeno peppers, sliced (optional)
    • 1 medium-size onion, diced (optional)
    • 1 teaspoon of minced garlic (optional)
    • 1/4 cup of sliced mushrooms (optional)
    • 3 quarts of water for cooking the pasta

    Instructions:

    Prepare your vegetables by slicing and dicing them, then sauté until tender (optional).

    Season the ground beef with seasoning salt and black pepper.

    Heat canola oil in a large skillet until it reaches the desired temperature. Next, add the seasoned meat and cook for 12 to 15 minutes, ensuring it is thoroughly cooked. Once done, set the meat aside.

    Personally, I prefer to leave larger chunks of ground beef in this dish for added texture and flavor. However, feel free to crumble the meat if that is your preference. Ultimately, the choice is yours to make based on your personal taste preferences.

    Cook the fusilli noodles or egg noodles in boiling water for 10 to 12 minutes, then drain.

    Combine the cooked meat, beef broth, and seasonings with the noodles to create a flavorful sauce. Add the flour and a little of the liquid to make a slurry to thicken the sauce. Then add it to the pan. Stir well and simmer just until the sauce has thickened.

    Stir in the sour cream or Greek yogurt for creaminess. Then do a quick taste test. Add more seasoning, if desired.

    Add the shredded cheese and mix well. Serve topped with extra cheese and salsa, if desired.

    Notes:

    Cheese is essential in binding the flavors together, so be generous with it.
