    Oatmeal Raisin Cookies

    Indulge in the delightful flavors of these scrumptious oatmeal raisin cookies, perfect for a quick breakfast option or a delightful pick-me-up snack throughout the day. Not only are they truly delicious, but they also offer a healthier alternative to satisfy your sweet tooth.

    Ingredients:

    • 1 cup of butter, softened
    • 1 cup of brown sugar Splenda blend, or brown sugar, packed
    • 2/3 cup (10 tablespoons and 2 teaspoons) of granulated Splenda, or sugar
    • 2 large eggs
    • 1 tablespoon of pure vanilla extract
    • 3 cups of old-fashioned oats
    • 1 1/2 cups of self-rising flour
    • 1 1/2 teaspoons of ground cinnamon
    • 1/2 teaspoon of nutmeg
    • 1 1/2 cups of raisins
    • 1/2 cup of chopped pecans, optional
    • 1/4 to 1/2 cup of dark chocolate chips (optional)

    Instructions:

    In a large bowl, combine 1 cup of butter, softened 1 cup of brown sugar Splenda blend, or brown sugar, packed, 2/3 cup (10 tablespoons and 2 teaspoons) of granulated Splenda, or sugar, 2 large eggs, and 1 tablespoon of pure vanilla extract. Mix until the ingredients come together and are creamy.

    Then add the rest of the ingredients together and mix well.

    Scoop the cookie dough out into golf ball-sized amounts on a parchment-lined cookie tray. Space the cookie dough out by at least 2 inches. The cookies will spread out while baking.

    Bake the cookies in a 375-degree oven for about 12 minutes. Allow your oatmeal-raisin cookies to cool completely before transferring them from the cookie tray.
