    Savory Stuffed Fried Breakfast Bread

    Today, I used pancake mix to create a delectable stuffed fried breakfast bread, although Bisquick mix can also be used for a different flavor and texture profile. The stuffed bread is equally delicious regardless of the mix used.

    Ingredients:

    • 1 cup of pancake mix or original Bisquick mix, depending on desired flavor
    • 7 tablespoons of warm water
    • 4 scrambled eggs
    • Sliced Canadian bacon or preferred breakfast meats
    • 2 tablespoons of butter for scrambling eggs
    • 1/4 cup of canola oil for frying

    Instructions:

    In a bowl, combine 1 cup of dry pancake mix or original Bisquick mix with 7 tablespoons of warm water. Form the mixture into a ball and allow it to rest for 30 minutes.

    In a skillet, melt 2 tablespoons of butter over medium heat. Add the scrambled eggs and cook for approximately 6 minutes, stirring occasionally. Set aside.

    Divide the dough into four equal segments and thinly roll each piece out into rounds on a floured surface. Sprinkle the scrambled eggs over the dough and add slices of Canadian bacon or preferred breakfast meats.

    Fold the dough into half-moon shapes, overlapping the edges and pinching them together.

    Heat the canola oil in a large cast iron skillet over medium-low heat. Transfer the prepared breakfast bread to the skillet, adding more oil if necessary to cover the bottom layer of the bread.

    Brown the stuffed bread on one side, then flip and brown the other side. Cook about 5 to 6 minutes per side or until golden brown.
