While I prefer to fry them, the biscuits can be baked as well. My recipe provides instructions for both methods, ensuring that you can enjoy these wonderful treats cooked to perfection.

    Ingredients:

    • 2 1/4 cups of homemade pancake mix, or you can use store-bought pancake mix.
    • 2 tablespoons of granulated Splenda or sugar (optional)
    • 2/3 cup of buttermilk, evaporated milk, or whole milk
    • 2 tablespoons of melted butter

    Instructions:

    In a bowl, combine the pancake mix, granulated Splenda or sugar, buttermilk, evaporated milk or whole milk, and melted butter.

    Mix the ingredients together with a wooden spoon, then knead the dough by hand until it forms a smooth ball.

    Transfer the dough to a lightly floured countertop and pat it out to a half-inch thickness. You can cut the dough into rounds using a Mason jar, biscuit cutter, or squares.

    To fry the pancake biscuits, heat 1/2 cup of canola oil in a large skillet over medium-high heat. Once the oil is hot, fry the biscuits for about 6 minutes per side, covering the skillet with a lid. This should take approximately 12 minutes in total.

    To bake the biscuits, grease a baking tray with butter and place the cut biscuits on it. Bake in a 400-degree oven for 12 to 15 minutes.
