    Hey there! Looking for a tasty way to use up your summer veggies? This Zucchini and Tomato with Cheese Casserole is the perfect dish for you. You can even mix it up by adding some cooked sausage, chicken, or pasta to make it extra special. And trust me, it's super yummy just the way it is!

    Ingredients:

    • 1 large zucchini, chopped
    • 1 yellow summer squash, chopped
    • 4 to 6 Roma tomatoes, chopped
    • 4 green onions, chopped
    • Seasoning salt
    • Freshly ground black pepper
    • 2 1/2 cups of grated mozzarella cheese
    • 1 pound of cooked sausage, cooked chicken, or cooked pasta (optional)

    Instructions:

    First things first, let's get those veggies ready. Wash and coarsely chop 1 large zucchini, 1 yellow summer squash, 4 to 6 Roma tomatoes, and 4 green onions.

    If you're feeling fancy, you can add some cooked sausage, chicken, or pasta to this recipe.

    Grab an oven-safe dish and start layering your chopped zucchini, yellow summer squash, tomatoes, and green onions. If you're adding meat or pasta, throw that in too. Sprinkle some seasoning salt and black pepper on top, then add a generous amount of mozzarella cheese between each layer.
